There is a thread below on "Early Time Models;" it has a number of links that feature old time equipment and structures.  Most of these are kits that have been available for 50 or 60 years; in terms of material and technology, some go back to the 1930s.  Some are a bit crude, some are rather challenging by virtue of older materials such as wood and cardboard, or being of metal that should be soldered, but I can personally attest they are fun to work with and can give good results.

This is where I would start:

I would also look up a large distributor, called Walthers; they carry an enormous amount of material, including Bachmann's products.  I would start by using the "Advanced Search" option, looking under "HO" and "Structure," and typing in the keyword section what type of building you are looking for (such as "Freight House").

Good luck, and don't be scared of something even if it may look like a box of sticks!

Check with your LHS for figures.  A number of figures are available in period clothing from several manufacturers.  Also there are cows (good for driving down main street) horses, etc.  If your dealer doesn't have what you're looking for, he can probably get it from Walthers.

As an aside, if you don't have Walthers HO reference book (they don't call it a catalog), you should get one.  Its really an excellent...well...ah....Reference Book.  Good luck in your search for old time stuff!   ;D
Just workin' on the railroad.

Try to find Bachmann's Old West structures somewhere - i think they are great, but hard to find.

Lots of wild west stuff on ebay, Buy It Now which are usually good sellers. I get much of my wild west, old west, (how old is old west stuff?) stuff on ebay. Just have to know how to shop wisely.
Your mileage may vary.

I'd like to second this. I found all of Bachmann's Plasticville "Old West" structures except for the blacksmith shop on eBay.

A company called Kibri also used to make an entire "Old West" town worth of structures, too. They were very nice. They also show up on eBay from time to time.
