I'm starting to feel as if I was given BAD advice at my LHS recommending E-Z track. It seem as if there are no track plans/layouts available to use as an example I purchased "E-Z MODEL RAILROADS" The E-Z Track Planning Guide & Layout Book, it did help in how to cut E-Z track nothing in the way plans and layouts. I have issues of Atlas track plans but they are not a one to one match.

Where can I find examples of layouts using E-Z track? i.e. (switching layouts)

I can vouch that XTrackCad has a steep learning curve, but it helped me calculate how many of which E-Z Track pieces to use in my layout.

For a free program I have no complaints, and it's available for Windows, Mac, and Linux computers.

I have a 4x6 layout that took some work to duplicate and one section I had to leave out. I have been looking at switching layouts, this is an example. http://www.atlasrr.com/Code100web/pages/10017.htm. I have downloaded SCARM and Any Track (free) I guess there is more available with other track.

Mentioned a few posts above but may I recommend downloading SCARM. You can click on EZ Track and it will offer the pieces available and you can play around forever with layout possibilities.  There are I'm sure better ones out there buut for a clueless techno-idiot like me it works great.

I'm using SCARM program, I wanted to duplicate the layout in one of my Atlas books. What I found is I like the switching layout I now have 4'x6' and not the continuous loop I was going to make.
