I have an existing oval ez track, what additional pieces do I need to complete a figure 8 layout using a 60 degree crossing

A basic EZ track figure 8 with a 60 degree crossing and 18" curves requires a total of 20 curves, 4 9" straight sections and the crossing. If you already have an oval with at least 4 straight sections you will have to add 8 more curved sections in addition to the crossing.

If you are looking for something longer than Hunt's plan, you can still use the 30o crossing as he suggests. Just add an equal number of straight sections opposite one another on either or both loops of the figure eight. If you are trying to keep your train table as narrow as possible your original plan with the 60o crossing will work better.

If your loco is too heavy to lift, you'd better be able to ride in, on or behind it.
