I am trying to build a layout for n scale currently.  I have a total of 2 switches and a crossover track that require power.  How many 16V DC Multi-Accessory Power Supply would I need in order to power that?  I'm not sure how many switches it could handle.  I'm used to working with Lionel but N Scale is new to me.  Hoping someone could help me.

Tracks that require power
(1) 44876 right hand crossover
(1) 44862 remote right hand switch
(1) 44861 remote left hand switch

A single 14 -16 volt AC or DC power supply, rated 1 amp or better, would be more than sufficient for what you have. Switches and crossovers do not draw power continuously, only when activated, so there is no need for seperate power supplies for each one.

If at first you don't succeed, throw it in the spare parts box.

Thank you very much.  Also do you have a recommendation for a controller that could handle three lines?  All the engines are basic and are not dcc although that kind of controller would be fine as long as it can run the older engines as well.

If you are only operating DC trains, the MRC 1300 or 1370 would be a good choice. Both offer a wide range of speed control, and include an AC output for switches and accessories.
