In model RR terms does plug-door box car mean that the door opens?

a plug door is like the door on a safe or an old fashioned refrigerator- the door "plugs" the opening. The older box cars had doors that just rode on tracks and allowed leakage. Plug door cars meant the inside was sealed.

On models with plug doors, the doors usually do not open.
Growing older is mandatory but growing up is optional.

Well what about the 40' bachmann boxcars to those doors open?

Plug doors (in railfan terms) provides a smooth surface inside the car. Inside, the door is flush with the inside wall.
