What is the best turnout to use in a yard layout

Ideally you want to use the longest turnouts available.

These will give you less S-bending as cars move to parallel tracks, and locomotives with long wheelbases will be able to negotiate the turnouts better.

(In case you don't know, an S-bend is when you have two opposing curves in close relation to each other, you want have a straight section at least the length of your longest car or locomotive between them to avoid problems.)

Yes, #4 turnouts would work, but #6 ones would be better if you have room for them.
