Bachmann has had a new track book in the works for a couple of years now.
Most track plans/layouts based on sectional track can be adapted to use Bachmann E-Z Track.

Look up a few threads in this section, Terry has posted some fantastic pictures of EZ layouts.
The possibilities for layouts are endless. I think you have to decide how you want to run your railroad, lots of switching cars and locos, mostly scenic routes, or maybe try to duplicate a known real size line. Even then, you will probably make many changes before you find what you like. My opinion, FWIW, is to use 18" as a minimum, 22" if you have the room
