Pilot jumps off in various spots almost random.
Will a stronger spring help? If so where can it be found?

Quite the opposite. I remove all truck springs. Improves pulling power slightly as well.
What brand of track do you use?

My 2-6-0 as well as a friend's derail invarious times and random spots. Added weight removed springs change springs. Is the middle driver riding up causing the problem
Check the track where it derails. Run a fingernail over the location. See if there is a misaligned rail joint or a rough spot that is snagging the wheel flange. File smooth as required. Check the wheel gauge too.
At one point I grew tired of this and removed the front pilot altogether making an 0-6-0 which ran until I had to send the unit to service for unrelated repair and they replaced the pilot.
Does it run ok now?
And also make certain that the wheel set is rotating all the time. I've had them hang up randomly and that is an invitation to snag on a rail joint.
