Google for small layouts or snap-trak layouts. You should come up with lots of them. They won't be specifically for E-Z Track, but you should be able to make adjustments as necessary.

The simplest layout is an oval. Use some straight track to make it wider.
Bachmann needs to make some different curves. There is too much space in between the 11 1/4" & the 19" radius curves. Otherwise, you would be better off using Unitrak. Kato makes track pieces that would convert a single track mainline into a nice doubletrack one.
MicroTrain's new Ztrack follows the geometry of Marklin Z track, with a plastic base. Then you can mix components with ease.
