just wondering if there are adapters or anything that you can get to hook up older trains to new ones

Most people make a "transition car" to do that. Old style coupler on one end, newer knuckle coupler on the other. The alternative is to use IHC of Texas "Mate-A-Matic" couplers: http://www.ihc-hobby.com/product/19001 (http://www.ihc-hobby.com/product/19001) They look oversize and clunky, but they mate with old style X2F couplers and knuckle couplers.
