I understand it's good to break in a new motor for 30 minutes, but is it ran at a slow, medium, or fast speed for the 30 minutes.

Slow to medium speeds and in both directions. Breaking in on a figure 8 also helps as it breaks in the mechanism for turns in both directions. If breaking in on a circle or oval, change which way the front of the locomotive points from time to time to accomplish the same thing.
