starting a new N-gauge layout the common issue of what kind of track to use becomes present. For the most part i'm trusting on Atlas's code 55 flex track. pro's and con's anyone??

I use the Atlas c80 flex track as that is what I had a lot of when I started my current layout.
When laying flex track take your time.
I have had to redo about a third of my layout due to thinking that what I was doing was good enough.
Well as I learned it was not!
I learned to use pieces of sectional track between switches and flex track.
This is to make sure that there is no binding. Any where you are not sure about a curve use sectional track to see if it will be correct,  And no curves under 11" and 12" is better.
