Push buttons, two per turnout, work well on control panels and are cheap.  They are my first choice with dual solenoid switch machines, which are what your turnouts ("track switches") are equipped with.

If you like the looks of toggle switches, then you can use single pole double throw centre off spring return toggle switches.  These are sometimes designated as (on)-off-(on) where the brackets indicate that a bracketed position is a momentary position.  These toggle switches spring back to the centre off position when you let go of them so the current does not melt the switch motors.  These are quite a bit more expensive than pairs of push buttons.
