Title: Tender Mogul / American

Hi all together!
I have one question regarding the tenders of the 4-4-0 and the 2-6-0.
In front of the tender, on the top on both sides are small hand wheels and a lever on each.
Can somebody tell me something about the purpose?

Water shut-off valve for the water lines feeding the locomotive. If they ever had to disconnect the water lines from the loco, they'd just shut this valve to keep the tender from draining. Some tenders had a small spigot on the side of the tender for water to fill a bucket for whatever purpose (typically not drinking).
