Can these cars be converted to knuckle couplers?

Use Micro-Trains 1133.  That one is almost universal for older B-manns. These cars are an older design.  If you plan to run around really sharp curves, you can use 1134, which is a longer shank version of 1133.   Bachpersonn sells dummy knuckle couplers that you can use, as well.  Unimates of varying shank lengths are also out there.   Unimates are dummy couplers, as well.

If you are going to use the MTs, buy the coupler tweezers.  They are indispensable and inexpensive.

Agree with brokemoto, if you want to use MT than it's the 1133.
I don't think MT offers a truck w/coupler as a direct replacement.
I do not know if the Bachmann EZ mate mark II couplers, or the Bachmann dummies, are a simple drop in replacement.
Were it me, I'd go with the short(?) shank Unimates and leave them coupled.

I also agree with the tweezers and if you're going to be assembling a lot of couplers, the assembly jig is a fantastic investment.

I second that. About 10-15 years ago I converted  ~350 cars and 125 locos to MT's;  (mostly body mount 1015's). Short but steep learning curve. After a while I could assemble a 1015 in about 2 minutes using the assembly jig. (I found a Hobby Shop -Gandy Dancer- in Chamblee, GA that was going out of business and I snapped up all their 1015 bulk packs at I think 70% off)
