The product page for that turnout says the curved part matches an 18" curve segment. Placing an 18" curve over my turnout confirms this.

The 18" curve package page says the four segments within make up 1/3 of a circle.

1/3 of a circle is 120 degrees, divide 120 by 4 and that tells us each segment is 30 degrees. :)
