My brother and I are planning to build HO prototype of the Illinois Central RR operation in our Mississippi hometown. I want to know if the Tortoise switch machines & related Tortoise products work w/my Bachmann EZ-Track NS turnouts, #6s, and the EZ-Track in general? We plan a DCC layout.

It's been done, but it takes some modification to the EZ-Track turnouts. If they are manual turnouts, it's mostly a matter of removing the bottom plate and drill a hole in the throwbar for the Tortoise actuating wire. The solinoid switch machine on electric turnouts will have to be removed.
If you have electric turnouts, you might consider leaving the existing solinoid motors and using something like a Digitrax DS-64 to activate them from your DCC controller.
