Is it possible to build a fiddle yard out of EZ track?
Witch turnouts should be used?

Yes, it is possible. And if you do, keep to the numbered switches like #5 or #6. Do not use the standard ones that come in the expansion packs. Using these in a yard will result in a nasty 18r S curve that will cause problems, and the tracks will be spaced too far apart.
