It seems the more I learn about this great hobby, the less I know about it.

I have not run the 10-Wheelers that I have collected, yet.  The Chassis 4 & 5 and Annies are displayed on shelves where they do get dusty.  I bought some new and others used.

Bachmann states lubrication by the number of operating hours.  Automobile oil changes are usually stated as the lesser of distance or months.  So, should I be lubricating these engines even though I am not running them now?

No, I don't see a need to do that. You might want to lub it before you run it again, if it has been sitting on the shelf for a long time though. Just to get oil on the surfaces that have become dry.

Car oil is different then the oil you use to lub youe engine. In a car, the oil get pumped through the engine walls over and over and over. It collects dirt and sludge which will settle in the bottom of the oil pan, and can be repumped through the engine again when you start driving the car again. There is more to it than that, but you get the point.
